Kendall is currently a 4thyear Ph.D. student in the Department of Food Science & Technology under Dr. Suresh Pillai. The Pillai Lab’s research area focuses on electron beam (eBeam) technology when used in the food, healthcare, and environmental remediation industries. Kendall’s dissertation research focuses on the use of eBeam technology for extending the long-term quality and shelf-life of cooked, prepared meals for use in the airline and commercial space travel catering industries. These shelf-stable meals also have the potential for use as disaster rations, hospital food, meal delivery kits, and supermarkets. Additionally, Kendall works full time at Axiom Space as their Food Scientist, where she leads the efforts in providing inflight food service for private astronaut missions and assists with making strides towards sustained deep space exploration.
